Mimo I think that maybe your cream was too fluffy and soft which is why it was slipping off of the stick ❤
Separate about 2c of buttercream and add about 1/4c p sugar to make it thicker then try it. Add a little more if its not thick enough Yours looks really loose, it's needs to be thicker. Everywhere is different depending on the climate. I promise it will work!! U can do it girl I know you can!! Also your tip is too small, use the larger one to practice with, some how it makes a difference when your learning.
Your buttercream looks a lot softer than the people making the red buttercream flower. I know I prefer a stiffer buttercream for making roses.
You're being too hard on yourself. The flower was really pretty. I struggle with any sort of art that's supposed to be quick or intuitive because I always assume mine looks bad. Other people's flowers have flaws, too, I guarantee it.
Yes the buttercream is on the soft side. Starting with frozen 🥶 squares might help.

It seems like They use their wrist to create a circular motion with the stick and you have to use colder buttercream and maybe if you made the pedals longer. Idk how to explain it😭😭

Okay so I'm no pro but looking at your video I'd say your buttercream is too warm. When I made these they got worse as my hands melted the buttercream inside the piping bag. I put it in the fridge for a few minutes and bam they looked good again. I did mine on one of those flat things with a stick in the bottom. Using those you can do it on a bit of baking paper and put it in the fridge to set before you put it on the cake or you can freeze them so you can make them ahead of time
It’s funny, I have never had a problem even when I started being a decorator to make buttercream roses it was one of the easiest things to do. Just the easiest thing for me to do grab a rose now and start making a flower . Same thing with the borders on the cake. My first one I think was a reverse E border.
Omgggg same mimo like for the nail I'm really good at making flowers but doing it on the stick is so hard to do buttercream flowers on the stick and 💕 just wanna let u know what helps me to do roses is u go 3 , 5, 7, on bottom row its either 3 or 5 for the piping if wanna make them big 🙂 hope this helps have good day mimo ❤️😃 hehe

Your butter cream is way too soft! I really think that that’s a huge part of the issue.
Maybe try cooling the butter cream a bit. They are using a tip that makes the butter cream come out thinner, if you look a little closer to the tip in their video it looks like the tip is bent in a little so it could be that their type of tip is only allowing out a little butter cream at a time. You got one flower right so don't give up, you got this.

Could it be sliding off because of the angle difference? Your holding the skewer straight down whereas the video mentioned were holding it on it's side…
pleasee try making these along with any other kind of toppers with cold buttercream. your buttercream looks warm and thats most likely why it isn’t working well. cold and warm buttercream will make or break whatever you’re trying to create

Dear Mimo, I've seen less talented or experienced bakers do cream roses. I'm sure the issue must have to do with the cream you use being too light or liquid. I'm sure if you keep on trying different techniques, you get it right eventually. Cheers! 🌹🌹🌹
Your buttercream needs to be thicker and making a flower upside-down sounds like a mess Mimo. . . Upside-down is always a mess, even things that were made to be upside-down are a mess. . . If it's falling off because of gravity you need more powdered sugar in it. . . Also I make my own powdered sugar because they thin out the stuff in the store with corn starch and in large amounts like in fondant and icing I can really taste it
Mimo, the buttercream in the TikTok is definitely colder than yours. It comes out more slowly from the tip and the edges are sharper, but I don't know how cold it is. Maybe try with colder buttercream (but not refrigerator temperature cold!).

Buttercream doesn't look stiff enough . I prefer using a flower stand than a skewer. Your buttercream needs to be stiff enough where a spoon or knife will stand up straight in the buttercream. If if leans or falls over, the buttercream is not stiff enough. The way you're trying to do it is the most difficult, imo. Google – How to make a Wilton buttercream rose. Their method is much easier, imo. I hope this helps!!

Have you tried Russian piping tips? I just ordered a set but haven’t had a chance to use them yet. I’m hoping they’ll be a little easier since it creates the whole flower. We shall see lol.
Put in more powdered sugar if you want to make buttercream flowers. If your ur buttercream is slightly sturdier then normal, it’s easier to do them.

I think that would have worked with stiff cold buttercream. The flower piping tips can be really good with practice as well
