Einar is actually right. There's no point in waiting for plant wheat for next year. If they can profit off it first, they'll be able to buy things like tools and food to make their work easier/faster going forward. They'll still have down time to develop the rest of the land too. So they'd have usable land that they are not profiting off of
By waiting, they're essentially delaying themselves much more.

You're almost there; thorfinn being a farmer gives him passion for giving life, for making life happen. A direct opposite to his taking of life

I get the feeling that we’re getting Thorfinn’s journey to become more like his father. We already got him in his warring state. Now, he’s in a more peaceful state where he’s pretty much done with seeking out battle, and, instead, exploring what other things there are to life. Even Thors was learning new skills when we see him in the village.
