Regarding shaving, Norse culture regarded facial hair, and especially beards, as a sign of manhood. I'm pretty sure thralls (slaves) were forced to shave. See also the insult, "beardless youth"

The fact that you can't put a drinking horn down is exactly why they were used. If you can't put your cup down, then nobody can put anything in your drink. There's a similar reason why people clink glasses together when they drink, it was to slosh some of each other's alcohol into each other's cups that way you both know they isn't anything weird in either because you're both drinking it now.
There's also a bunch of tie ins to religion and other ceremonies that are partially a holdover from the Greeks.
