In real life? A lot. He's using Chainmail armor that protects against cuts and above that he's using Padded armor which protects against blunt force attacks (Doesn't negate the damage, but diminishes it).

On the topic of Armor
What Canute is wearing in this episode would give him really good protection from sword slashes and cutting moves but wouldn't be as good as stopping stabbing or piercing attacks.
As for what most Vikings wore, they'd typically wear something like a gambeson or if they had some more money to spend a Chainmail Hauberk.
