I think "full of shit" isn't just an Irish thing because, well, I hear that with some regularity and I live in the US.
I’ve played stardew valley expanded on a couple play-throughs and thought it honestly made the game way better, to the point where I don’t really like playing vanilla anymore lol.
Ridgeside Valley mod is also pretty good but it’s honestly TOO much. It adds an entire new town and like 50+ NPCs and I find it overwhelming but it’s still well done.
Why is he not just upgrading his water can and hold the button to cover his tiny field instead of grinding for sprinckers??

You should totally play more. The mod add new content throughout, but there is definitely an emphasis on late game. I think you need to complete the community centre to unlock my favourite character – Apples. Please consider making a longer series of this, there's just so much to explore.
