KETO TORTILLAS
(makes eight 4-inch tortillas)

½ cup almond flour
⅓ cup lupin flour
1 tablespoon xanthan gum
½ teaspoon salt
6 tablespoons water

1️⃣ In a small bowl, combine almond flour, lupin flour, xanthan gum and salt. Pour in water and mix until dough forms. The dough should feel similar to play-doh.
2️⃣ Divide dough into 8 balls to make mini tortillas (4”) or 4 balls to make 6” tortillas.
3️⃣ Flatten into a tortilla using a tortilla press. Sandwich a ball between two sheets of parchment paper and press down to flatten. Can flatten using a rolling pin as well.
4️⃣ Place a tortilla in a skillet heated on high heat. Cook for 30-60 seconds or until the underside starts to turn brown in some spots. Flip and cook the other side for 30 seconds. Remove from skillet and place back on parchment paper to cool.

  1. The Lupin is sooooo low calorie and low carb. Definitely trying it. Going to try to make cheddar mug bread with it. I will also try these and freeze them with parchment paper in between.

  2. Could you please consider making a corndog recipe for this “lupin” and maybe coconut flour? With some Hebrew national or other all beef Costco hotdogs. Thank you and God bless.

  3. Thank you Annie, I look forward to trying this recipe. I’ve also just ordered a tortilla press, and I’m excited to try it – thank you for the suggestion!

  4. Net carbs distorts the truth about how sugar works in the body, and it gives you a false sense of security. All carbs make it into your bloodstream, and all carbs do the damage! All the fiber does a slowly absorption, it does not stop the absorption. It is the total time the carbs are in your bloodstream that does the damage, not the amount of carbs ingested. Net carbs is a lie, a distortion, a distraction from the truth. Count all carbs!

  5. Thanks for the info. You can also add psyllium husk, and olive oil instead of xanthan gum. Try it see if you like it

  6. What is your favorite LMNT flavor? It seems to me that the offer is backwards….you have to buy the one large package of one flavor in order to get the sample pack of 8. I’m sure people who don’t know what flavor to try would much rather get the sample variety pack first and then be able to make the larger purchase based on a flavor they liked. I wouldn’t want to be stuck with a lot of packs of a flavor I didn’t care for just to get a variety pack and find out omg I should have ordered this flavor!

  7. I use a round pizza pan to press mine. I place it over my dough ball (using parchment paper on both sides of course) and press down on both sides of the pan with even pressure and was surprised how perfect they turned out 😊

  8. Does anyone know of a keto tortilla that does not need refrigeration. Going on a multi week backpacking trip this summer.

  9. Annie, I watched your tortilla recipe and wanted to share an ingredient with you that I have been using for a few years for a big variety of keto bread and tortilla. I just stumbled on it on my own and have not seen anyone using it. It's Celery fibre. I have been doing that celery juce in the morning experiment where you remove all the fibre to make the juce, I used a nut bag to strain the juce from the blended pulp as I only have a blender and no jucer. The fiber left in the nut bag was almost the consistency of play-doh, I started to freeze it in balls so I could store it for use in recipes, I use alot now instead of psyllium husk in the classic tortilla no egg recipies that I've found online. I've mixed it with all manor of things it to flavour it, Celery is quite a mild savoury flavour on its own and works really great for keto because after all the juce is gone it's very low carb. I use it fresh or defrost a ball from the freezer, I even steamed a ball before to thaw it out in a hurry, and that also worked fine. I wonder if you may like to play with the concept for your channel because I watch your videos and would be interested on your take on this 🩷

  10. I made it for dinner tonight! This is the true tortilla! I will not follow anything else. Lupin flour indeed makes a difference. So easy to make and so malleable:)
