Three routes are adapted into anime from the Fate/Stay Night world line, which can be summarized as :
Fate/Stay Night (called the "Fate route" in the original visual novel) – Shirou ended up with Saber.
Fate/Stay Night : Unlimited Blade Works – Shirou ended up with Rin.
Fate/Stay Night : Heaven's Feel – Shirou ended up with Sakura.
Basically, you can pick which FMC you want Shirou to end up with. All three routes are canon due to the existence of parallel timelines in Fate.
"World lines" referred to the parallel worlds that are canon to Nasuverse, which is the Fate franchise was part of. Essentially, every canon Fate franchise is a world line. It's like Marvel and its multiverses.
